Guilty! That’s my impression when I found out this week we’re going skinny. Unlike those who start diet as their new resolution, I tend to start dieting when Spring comes because we have so many things going on. Thanksgiving – my birthday (of course, it’s an excuse to enjoy something delicious, right?), Christmas, New Year, followed by 2 birthday celebrations, Chinese New Year, Valentine’s Day, and not to mention that in-laws are around, so we eat out a lot! No wonder, I feel so guilty and excited at the same time.
My definition of skinny is something light and filling, and this salad is the answer. I just love the vibrant colors and amazing flavors. Just take a look at what’s coming this week !! Right after Valentine’s day
