A SKINNY #SUNDAYSUPPER: AHI TUNA SALAD

Guilty! That’s my impression when I found out this week we’re going skinny. Unlike those who start diet as their new resolution, I tend to start dieting when Spring comes because we have so many things going on. Thanksgiving – my birthday (of course, it’s an excuse to enjoy something delicious, right?), Christmas, New Year, followed by 2 birthday celebrations, Chinese New Year, Valentine’s Day, and not to mention that in-laws are around, so we eat out a lot! No wonder, I feel so guilty and excited at the same time.

My definition of skinny is something light and filling, and this salad is the answer. I just love the vibrant colors and amazing flavors. Just take a look at what’s coming this week !! Right after Valentine’s day :) !!

Ahi Tuna Salad

Ingredients:

  • 1 whole lettuce
  • 1 cup grape tomatoes, halves
  • 3/4 cup cucumber, quartered and sliced
  • 1/4 cup carrot, metchstick
  • 1/4 lb tuna, sliced
  • 1 tbs nori komi furikake (rice seasoning)
  • 1 tbs scallion, sliced

Marinade for Tuna:

  • 2 tbs sesame oil
  • 1 tbs light soy sauce
  • Sea salt
  • Optional: 1 clove garlic, finely chopped and 1 jalapeno, finely diced

Salad Dressing:

  • 1/2 tsp sriracha sauce
  • 1 tbs rice vinegar
  • 1 tbs light soy sauce
  • 3 tbs virgin olive oil
  • 1 tsp ginger juice
  • Salt and freshly ground black pepper

Directions:

  1. Combine greens, tomatoes, carrot, and cucumber in a bowl.
  2. Slice tuna on an angle and combine ahi tuna with the marinade in a mixing bowl. Adjust seasonings.  Chill at least 30 minutes to let flavors develop.
  3. In a smaller bowl, whisk the dressing. Drizzle dressing over your salad and toss to coat evenly. Arrange tuna on the salad and enjoy!
