I heard so many bad news last week. It’s really just too much for January. First, I heard someone passed away while he was on vacation. Then, two days later, there was a medical emergencies on the train to work two days in a row. The following day, my best friend’s uncle passed away. He was in a good condition during the day, went home and suddenly unconscious that night. The next day, my grandma’s sister passed away when she was having a massage (uh, okay…). And just yesterday, a friend of mine was in car accident and had to go through a surgery. Honestly, it was like a wake-up call for me – to know that I’m still alive and surrounded by people who care so much about me. To that, I am thankful.
Now, let’s talk about fried rice. I figure I will need something light and easy to go through this week. Remember the butter I made for Chicken Kiev? Well, if you have leftover butter, don’t throw that away because that will add flavors to this fried rice.
Buttery-Herb Fried Rice
Ingredients:
- 1 cup cold cooked rice
- 1 tbs leftover butter
- 1 tbs maggi sauce
- ¼ cup sliced cooked ham
- Green onions, thinly sliced
Directions:
- Heat a wok or frying pan and add the butter. Let it melt and add the rice and ham. Cook, stirring and mix well.
- When the rice is heated through, add the maggi sauce. Mix thoroughly for about 1 minute. Garnish with green onions and serve.

The recipe looks simple, delish, and n my to do list asap! Usually I fry rice with seasame oil but have been on a butter kick recently, why didnt I think of frying rice with butter? And scallions, mmmm. Perfect!
